Making dimmer turn only one zone on but turn off three

I don't think I can do this but want to check

I have three zones in my basement theater each controlled by a dimmer linc. There's one at the top of the stairs that I would like to turn on only the stairs zone but turn off all three. I made this work fine by setting the on state of the other zones to off. However if those zones are already on it turns them off. I can live with this but is annoying if someone hits the switch that isn't familiar with the setup.

So is it possible to key different scenes with the on and off buttons or have it ignore responders in the on direction only?

No, you cannot have on and off affect devices differently if you're using a Hub or manually linking devices. But you can create multiple scenes using KPL buttons as a controllers.
